CHEESE STRAWS
from The Frugal Gourmet's Culinary Handbook (Jeff Smith & Craig Wollam), 1991
1 cup flour 1/2 cup parmesan cheese
3/4 pound sharp Cheddar cheese 4 egg yolks
1 1/2 tsps salt 1 1/2 tsps cayenne pepper (or to taste)
1 cup cold water
Place all ingredients except the water in a mixing bowl. Blend until
grainy. Add the water and knead into a smooth dough. Roll the dough
out to 1/8" thickness on a lightly floured surface. Cut into long
strips like bread sticks or form shapes with cookie cutters; these will
produce sort of a cheese cracker. Place on a nonstick cookie sheet and
bake 10-15 minutes at 350 degrees F. Don't brown too much. Makes
dozens, depending on shapes and sizes.
